| Georgia Peach Salad |

| 2 1/4 cups orange juice, divided |
1 cup fresh blueberries |
| 1 package (6 ounce) orange-flavored gelatin |
Lettuce |
| 1/4 cup plus 2 tablespoons sugar |
Fresh peach slices |
| 1 teaspoons grated lemon rind |
Fresh blueberries |
| 2 cups buttermilk |
1 cup sour cream |
| 1 cup coarsely chopped fresh peaches |

| Bring 2 cups orange juice to a boil in a medium saucepan. Add
gelatin, sugar and lemon rind; stir until gelatin is dissolved.
Chill until mixture is the consistency of unbeaten egg white. Gradually
add buttermilk and mix well. Fold in 1 cup each peaches and blueberries.
Pour mixture into a 6-cup mold; refrigerate until set. Unmold on
lettuce-lined serving plate. Garnish with peach slices and blueberries.
Combine sour cream and remaining 1/4 cup orange juice; mix well
and serve over salad. |
